Chili con Carne

A Mexican stew popular in the UK especially when used as a filling for jacket potatoes. This recipe is based on a few I found online, combined, and then heavily adjusted to my own taste and cooking style (call me ChefGPT). It's probably not "authentic" but I like it. This recipe produces around 6 to 8 portions depending on how generous you are when plating.

Pasta Carbonara

A simple Italian classic. Slightly adjusted, but not enough to annoy most Italians. All the proper recipes out there are almost identical, but this one makes the perfect sized portion for myself and my fiancée with the ingredients we normally have on hand.

Vinaigrette

Vinaigrette is a specific sounding term for a broad range of salad dressings (and marinades). This recipe is based on a recipe from my father who taught it to my mother who then taught it to me. I've since adapted it to suit my tastes. It features lemon and olive oil, which might sound contrary to the name, but according to my research, it still qualifies as a vinaigrette.
